Milled and dried at low temperatures throughout, every stage of production is designed to preserve the extraordinary natural goodness of the einkorn grain — its vitamins, its nutrition and above all its remarkable flavour. The same delicate aroma that rises when flour meets water is still present in the finished dried pasta, a quiet sign that nothing has been lost along the way.
