I was speaking to one of our lovely regular customers, Zoe, the other week. She has shared a tasty and healthy recipe from one of the recipe books of Melissa Hemsley. (A purchase to be recommended if this recipe is anything to go by).
It is so quick, it’s pure genius!
Quinoa Pancakes
100g quinoa flakes *
2 ripe bananas
180ml milk of choice
1 teaspoon vanilla paste
2 teaspoons cinnamon *
2 teaspoons maple syrup

Mix all the above ingredients together in a blender.
Fry in a little oil 2 minutes on each side.
I have quinoa flakes on my shopping list this week…
