Serves one.
Ingredients
100g feta
1 tsp chilli flakes
1 lemon, zest & juice
1 1/2 tbsp olive oil
100g pasta
some parsley or basil roughly chopped
black pepper to taste
Preparation
Sit feta in a small dish and scatter over the chilli flakes & lemon zest, then pour over the oil
Set aside for at least 1/2 hour
Method
Cook the pasta and reserve 1/2 cup of the cooking water
Toss the pasta with the cooking water, crumbled feta and its juices, the lemon juice and the parsley or basil, stirring until everything comes together as a creamy sauce and binds the pasta
Add black pepper and a little more olive oil if needed
You can add some frozen peas or thinly sliced courgette
