Pasta with lemon & feta

Serves one.


100g feta

1 tsp chilli flakes

1 lemon, zest & juice

1 1/2 tbsp olive oil

100g pasta

some parsley or basil roughly chopped

black pepper to taste


  • Sit feta in a small dish and scatter over the chilli flakes & lemon zest, then pour over the oil

  • Set aside for at least 1/2 hour


  • Cook the pasta and reserve 1/2 cup of the cooking water

  • Toss the pasta with the cooking water, crumbled feta and its juices, the lemon juice and the parsley or basil, stirring until everything comes together as a creamy sauce and binds the pasta

  • Add black pepper and a little more olive oil if needed

You can add some frozen peas or thinly sliced courgette
